No Starter Sourdough Bread: 5pm Dinner Win

  • Author: Grace
  • Total Time: 1 hour 15 minutes
  • Yield: 10 servings 1x

Description

A quick, easy sourdough-style bread that requires no starter culture, rising in just an hour. Perfect for busy weeknights, this one-bowl recipe uses yogurt and baking powder for a tangy, crusty loaf.

Ingredients

Scale
  • 2 cups (250g) All-Purpose Flour
  • 1 teaspoon Instant Yeast
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 tablespoon Honey or Sugar
  • 1/2 cup (120g) Plain, Full-Fat Greek Yogurt
  • 1/2 cup (120ml) Whole Milk
  • 3 tablespoons (45ml) Vegetable Oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the flour, instant yeast, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the Greek yogurt, milk, oil, and honey until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or spatula until just combined. Do not overmix; the batter should be sticky and shaggy.
  5. Grease a 9×5 inch loaf pan or line it with parchment paper. Pour the batter into the pan and smooth the top.
  6. Cover loosely with a clean kitchen towel or plastic wrap and let rise in a warm spot for 45-60 minutes, until it rises by about 50-75%.
  7. Bake for 30-35 minutes until the top is golden brown and the internal temperature reaches 190°F (88°C).
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool for another 10 minutes before slicing.

Notes

Do not overmix the batter to avoid a tough texture. Use full-fat yogurt for moisture and tang. If the top browns too quickly, tent with aluminum foil after 20 minutes. For a crispier crust, place a pan of water on the bottom rack of the oven to create steam.
