Back to School Cheese and Cracker Stackers Easy Lunchbox Recipe

  • Author: Grace
  • Total Time: 9 minutes
  • Yield: 4 servings 1x

Description

A quick, easy, and customizable lunchbox recipe featuring stacked crackers, cheese, deli meat, and veggies. Perfect for busy school mornings and picky eaters.

Ingredients

Scale
  • About 40 sturdy, slightly salty crackers (e.g., Wheat Thins or Triscuit)
  • 8 ounces (225g) sliced cheese (sharp cheddar recommended, or Colby Jack, Swiss, pepper jack)
  • Optional: 8 ounces (225g) deli meat (turkey, ham, or roast beef, thinly sliced)
  • About 1 cup (120g) pickles or cucumber slices
  • Optional spread: mustard, cream cheese, or hummus (thin layer)
  • Optional fresh herbs (basil or parsley leaves)
  • Optional olives or cherry tomatoes for garnish

Instructions

  1. Prep your ingredients: slice cheese into squares or rectangles about the size of your crackers; fold or slice deli meat into manageable pieces; slice cucumbers or pickles thinly; set out spreads and crackers.
  2. Spread a thin layer of cream cheese, mustard, or hummus on one cracker to act as glue and add flavor.
  3. Layer a slice of cheese on top of the spread cracker, then add a folded slice of deli meat if using. If skipping meat, add an extra slice of cheese or a cucumber round.
  4. Top with a pickle or cucumber slice, then finish with another cracker. Press gently to help everything stick together. Garnish with a small fresh herb leaf or an olive if desired.
  5. Place the stackers carefully in a lunchbox or container to avoid squishing. Add a napkin or parchment between layers if stacking more than one. Store in the fridge until ready to eat.

Notes

Use sturdy crackers to prevent sogginess. Keep spread layers thin to avoid sliding apart. Prep ingredients the night before to save time. Keep stacks no more than 3 layers high to prevent toppling. Wrap individual stackers in wax paper if packing multiple. Customize with different cheeses, meats, or veggies as desired.
