  • 2 large Bell Peppers (chopped into 1-inch pieces)
  • 1.5 lbs Potatoes (Yukon Gold or sweet potatoes, diced into ½-inch cubes)
  • 1 medium Zucchini (halved lengthwise and sliced)
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Sea Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Red Pepper Flakes (optional)
  • 1 cup Broccoli Florets (optional, added in last 10 minutes)
  • 1 cup Cherry Tomatoes (optional, halved, added in last 5 minutes)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or grease lightly with olive oil.
  2. Wash and chop potatoes, onions, peppers, and zucchini into uniform ½ to 1-inch chunks.
  3. In a large mixing bowl, toss the chopped vegetables with olive oil, salt, pepper, paprika, garlic powder, and Italian seasoning until evenly coated.
  4. Slice the sausage into ½-inch rounds and add them to the bowl with the vegetables. Toss to combine.
  5. Spread the sausage and vegetables in a single layer on the sheet pan, ensuring they are not crowded to allow for roasting rather than steaming.
  6. Roast in the preheated oven for 20 minutes.
  7. Remove the pan from the oven and toss the vegetables and sausage to ensure even browning.
  8. Return to the oven and roast for an additional 5-10 minutes, or until potatoes are tender and sausage is cooked through (internal temp 165°F).
  9. If using optional broccoli, add it during the last 10 minutes. If using cherry tomatoes, add them during the last 5 minutes.
  10. Sprinkle with red pepper flakes if desired and serve immediately.

Notes

Do not crowd the pan; use two pans if necessary to ensure veggies roast instead of steam. Cut potatoes small (½-inch) so they cook at the same rate as the sausage. Use high-quality, sugar-free sausage for best results. Leftovers store in the refrigerator for up to 4 days but do not freeze well due to texture changes in potatoes and zucchini.
