- 2 large ripe avocados
- ½ cup (50g) unsweetened cocoa powder
- ¼ to ⅓ cup (60-80g) pure maple syrup
- ¼ cup (60ml) full-fat canned coconut milk
- 1 teaspoon pure vanilla extract
- 1 pinch sea salt
- Cacao nibs for topping (optional)
Instructions
- Cut avocados in half, remove pits, and scoop flesh into a bowl. Scrape off any brown spots and lightly mash with a fork.
- Add the avocado, cocoa powder, maple syrup, coconut milk, vanilla, and salt into a high-speed blender or food processor.
- Blend on high for 2-3 minutes, stopping to scrape down the sides, until the mixture is completely smooth and creamy with no green streaks.
- Taste the mousse and adjust sweetness or chocolate intensity if needed.
- Transfer to serving bowls or a large dish, cover, and chill in the refrigerator for at least 30 minutes (or overnight) to set.
- Serve chilled, topped with cacao nibs, coconut whipped cream, or fresh berries.
Notes
Ensure avocados are very ripe for a smooth texture. Do not skip the salt as it enhances the chocolate flavor. Chill thoroughly for the best mousse-like consistency. Store in an airtight container with plastic wrap touching the surface to prevent browning for up to 3 days.
