Ingredients

  • 1 cup (240 ml) whole milk
  • ⅓ cup (65 g) granulated sugar
  • 1 whole vanilla bean (or 1 tablespoon pure vanilla extract)
  • 2 ½ teaspoons (about 7 g) unflavored gelatin powder
  • ⅓ cup (80 ml) cold water
  • 2 cups (300 g) mixed berries (fresh or frozen)
  • 1 tablespoon (15 ml) lemon juice
  • 2 tablespoons (15 g) powdered sugar

Instructions

  1. Bloom the gelatin: Pour cold water into a small bowl and sprinkle gelatin evenly over the surface. Let sit for 5 minutes.
  2. Heat the cream and milk: In a medium saucepan, combine heavy cream, whole milk, and granulated sugar. Slice vanilla bean lengthwise, scrape seeds into pot, and add pod. Heat over medium-low until sugar dissolves and mixture is just about to simmer. Remove from heat and discard vanilla pod.
  3. Add gelatin to cream mixture: Whisk bloomed gelatin into warm cream mixture until completely dissolved.
  4. Pour and chill: Divide mixture evenly between ramekins or jars. Cool to room temperature, cover, and refrigerate for at least 4 hours or overnight.
  5. Make the berry sauce: While panna cotta chills, combine berries, lemon juice, and powdered sugar in a saucepan over medium heat. Stir occasionally as berries break down and sauce thickens, about 10 minutes. Blend for smooth sauce or mash for chunky. Cool to room temperature and refrigerate until serving.
  6. Serve: Spoon berry sauce over panna cotta. Optionally garnish with mint or whole berries. Serve chilled.

Notes

Do not skip blooming the gelatin to ensure proper setting. Use fresh vanilla bean for best flavor. Chill panna cotta for at least 4 hours or overnight for best texture. Strain berry sauce for a smooth finish if desired. Sauce can be made up to 3 days ahead. Adjust sugar in sauce based on berry sweetness.
