A super simple, refreshing, and light tropical smoothie made with frozen pineapple, coconut milk, and a touch of honey or agave. Perfect for any time of day and naturally dairy-free and vegan.


Ingredients

  • 1½ cups frozen pineapple chunks (225g)
  • 1 cup full-fat canned coconut milk (240ml)
  • 1 small banana (fresh or frozen, optional)
  • 1 tablespoon honey or agave nectar (15ml), adjust to taste
  • 1 tablespoon fresh lime juice (15ml)
  • ½ cup ice cubes (about 4 cubes)
  • Optional add-ins:
  • 1 teaspoon chia seeds
  • A few fresh mint leaves
  • 1 scoop protein powder (unflavored or vanilla whey)

Instructions

  1. Measure out frozen pineapple, coconut milk, banana (if using), and honey.
  2. Squeeze fresh lime juice.
  3. If using, have chia seeds or mint leaves ready.
  4. Place pineapple chunks, coconut milk, banana, honey, lime juice, and ice cubes into blender.
  5. Pulse a few times to break up ice, then blend on high until smooth and creamy.
  6. Adjust thickness by adding more coconut milk or ice cubes as needed.
  7. Taste and adjust sweetness with more honey or brightness with more lime juice.
  8. If adding protein powder or chia seeds, stir in now or blend briefly to incorporate.
  9. Pour into glass or mason jar, garnish with fresh mint or pineapple wedge if desired.
  10. Serve immediately with a straw.

Notes

Use frozen pineapple for best chill and sweetness; if using fresh pineapple, add extra ice cubes. Fresh lime juice brightens the flavor. Adjust sweetness last to avoid cloying taste. Blend in pulses to avoid blender overheating. Optional toppings like toasted coconut flakes add texture. For creamier texture, add half an avocado or coconut yogurt.
