  • 2 cups (about 300g) pulled pork, warmed
  • 2 cups (200g) shredded cheese blend (sharp cheddar and Monterey Jack)
  • 1 cup (165g) black beans, drained and rinsed
  • 12 fresh jalapeños, sliced
  • 2 green onions, thinly sliced
  • ½ cup pickled red onions (optional)
  • Sour cream (for serving)
  • Salsa (for serving)
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). If using the broiler, wait until the end to melt the cheese.
  2. In a mixing bowl, toss the pulled pork with smoked paprika, ground cumin, salt, and pepper. Warm if cold.
  3. Spread half of the tortilla chips evenly on a baking sheet.
  4. Scatter half the black beans and half the seasoned pulled pork over the chips.
  5. Sprinkle half the cheese blend on top.
  6. Repeat layering with remaining chips, beans, pork, and cheese.
  7. Bake for 8-10 minutes until cheese is melted and bubbly. Optionally broil for 1-2 minutes for extra browning, watching closely.
  8. Remove from oven and scatter sliced jalapeños, green onions, and pickled red onions on top.
  9. Serve immediately with sour cream and salsa on the side.
