Description

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease muffin tin or line with paper liners.
  2. In a small bowl or plate, mix 1/2 cup sugar and 1 teaspoon cinnamon for the coating; set aside.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, and 1 teaspoon cinnamon until combined.
  4. Pour in oil, milk, and vanilla extract (if using). Stir gently with a wooden spoon or spatula until just combined; batter should be thick and slightly lumpy.
  5. Fill each muffin cup about 3/4 full using a spoon or ice cream scoop.
  6. Bake for 15-18 minutes until tops are golden and a toothpick inserted comes out clean.
  7. Let muffins cool for 2-3 minutes until warm but not hot.
