Description
A one-pan, 15-minute game day dip featuring smoked sausage, melted cheddar and mozzarella cheese, and spices. It’s creamy, smoky, and perfect for entertaining.

- 1 pound smoked sausage (Andouille or kielbasa), sliced
- 1 medium yellow onion, diced
- 1 large red bell pepper, diced
- 1 can (4oz) green chilies, drained
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup heavy cream
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and black pepper to taste
- Optional: Fresh jalapeños, cilantro, or diced tomatoes
Instructions
- Slice the smoked sausage into thin rounds. Dice the onion and red bell pepper. Drain the green chilies and shred the cheeses.
- Heat a large skillet over medium heat. Add the sliced smoked sausage and cook for 3-4 minutes until browned and releasing oils.
- Add the diced onion and red bell pepper to the skillet. Cook for 2-3 minutes until vegetables soften.
- Stir in the drained green chilies, cumin, and chili powder. Cook for 1 minute until fragrant.
- Reduce heat to low. Gradually add the shredded cheddar and mozzarella cheese, a handful at a time, stirring constantly until melted.
- Pour in the heavy cream while stirring. Continue to stir until the sauce is smooth and glossy.
- Season with black pepper and salt to taste. If too thick, add a splash of milk or cream. If too thin, simmer briefly.
- Serve immediately in the skillet with tortilla chips, crackers, or vegetables.
Notes
Shred your own cheese to avoid anti-caking agents that cause graininess. Keep heat low when melting cheese to prevent separation. If the sauce is too thick, add milk or cream. If too thin, simmer longer or add more cheese. Do not freeze as dairy separates upon thawing.
