A quick and stress-free smoker recipe for tender pulled pork sliders with tangy slaw, ready in under 2 hours using boneless pork loins.

- 2 pounds boneless pork loin
- 3 tablespoons BBQ rub
- 1 cup apple cider
- 1 cup hickory or apple wood chips (soaked)
- 4 cups shredded cabbage
- 2 medium carrots (shredded)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon mustard
- 1 package Hawaiian rolls (12 rolls)
- 2 tablespoons butter (melted)
- 1 teaspoon paprika
Instructions
- Pat pork loins dry and rub generously with BBQ rub. Let sit at room temperature for 20 minutes.
- Preheat smoker to 225°F-250°F. Add wood chips and place a drip pan with apple cider on the cool side for indirect heat.
- Place pork on the grate over indirect heat. Smoke for 45 minutes, mopping with apple cider every 30 minutes.
- When internal temp hits 160°F, wrap pork tightly in butcher paper or foil. Return to smoker until internal temp reaches 195°F-200°F.
- Remove pork and let rest in wrapping for at least 20 minutes. Shred with forks or meat claws.
- While pork rests, mix shredded cabbage, carrots, mayo, vinegar, sugar, and mustard to make the slaw.
- Slice Hawaiian rolls in half horizontally. Place bottom halves on a baking sheet, pile with pork and slaw.
- Brush top halves with melted butter and sprinkle with paprika. Replace tops.
- Broil sliders for 2-3 minutes until butter is bubbly and tops are golden. Serve immediately.
Notes
Do not skip the resting period for the pork to retain juices. Wrap tightly to trap steam. Use a thermometer rather than time to determine doneness. Slaw tastes better if made ahead. Toast buns to prevent sogginess.
