  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (65g) all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a microwave-safe bowl, combine the melted butter and chocolate chips. Microwave in 30-second intervals, stirring between each, until smooth and completely melted.
  3. Stir the sugar into the chocolate mixture until combined. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract until the mixture is glossy and smooth.
  4. In a separate small bowl, whisk together the flour, cocoa powder, espresso powder, and salt.
  5. Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined. Do not overmix. Fold in optional nuts if using.
  6. Pour batter into the prepared pan and spread evenly. Bake for 20-22 minutes. The edges should be set, but the center should still look slightly soft and shiny.
  7. Let brownies cool in the pan for at least 15 minutes before lifting them out using the parchment paper and cutting into squares.

Notes

Do not overbake; the center should remain slightly soft as it will firm up while cooling. Use good quality chocolate for best flavor. Espresso powder enhances chocolate flavor but does not make the brownies taste like coffee. Store in an airtight container at room temperature for up to 3 days. Do not refrigerate as they will become hard.
