  • 1.5 pounds baby red potatoes (700g)
  • 12 ounces andouille sausage (340g)
  • 1.5 pounds large shrimp, peeled and deveined (680g)
  • 3 ears fresh corn on the cob, cut into thirds
  • 3 tablespoons olive oil (45ml)
  • 4 garlic cloves, minced (about 1 tablespoon)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • Lemon wedges, for serving
  • Fresh parsley, chopped (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Cut baby red potatoes in half if large, slice sausage into ½-inch rounds, and cut corn into thirds. Mince garlic and set aside.
  2. In a large bowl, toss potatoes and sausage with 2 tablespoons olive oil, 1 tablespoon Cajun seasoning, smoked paprika, salt, and pepper until evenly coated.
  3. Spread potatoes and sausage in a single layer on a lined large rimmed baking sheet. Roast for 15 minutes, flipping halfway through.
  4. Meanwhile, toss shrimp and corn in a bowl with remaining 1 tablespoon olive oil, 1 tablespoon Cajun seasoning, minced garlic, and a pinch of salt.
  5. Remove sheet pan from oven after 15 minutes. Scatter shrimp and corn around potatoes and sausage. Return to oven and roast for another 10-12 minutes until shrimp are pink and opaque and corn is tender.
  6. Remove from oven, gently toss to combine flavors. Squeeze fresh lemon juice over the top and garnish with chopped parsley if desired. Serve immediately with extra lemon wedges.

Notes

If using shrimp with shells, allow extra 10 minutes to peel and devein. Do not overcrowd the pan to ensure even roasting. Adjust spice level by reducing Cajun seasoning or adding extra smoked paprika for less heat. Use fresh spices for best flavor. Line pan with foil or parchment for easier cleanup.
