  • 3 large eggs
  • 16 ounces (450g) full-fat cream cheese, softened
  • 1 teaspoon vanilla extract
  • ½ cup (90g) chocolate chips or chunks (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan with butter or non-stick spray. Optionally, line the bottom with parchment paper.
  2. Melt butter in a microwave-safe bowl or over low heat. Stir in granulated and brown sugars until combined. Let cool slightly.
  3. Add one egg to the butter-sugar mixture and mix well.
  4. Sift in flour, cocoa powder, and salt. Gently fold until just combined. Do not overmix.
  5. Fold in chocolate chips if using. Pour brownie batter into prepared pan and spread evenly.
  6. In a clean bowl, beat softened cream cheese until smooth. Add remaining two eggs, vanilla extract, and ½ cup granulated sugar. Mix gently until silky and lump-free.
  7. Pour cheesecake mixture over brownie base, spreading carefully to cover the surface.
