A savory, paleo-friendly one-pan breakfast hash featuring crispy sweet potatoes, bacon, and eggs. This hearty meal is designed for busy mornings, keeping you full until lunch with minimal cleanup.

- 2 medium sweet potatoes (about 1 lb / 450g), peeled and diced into ½-inch cubes
- 6–8 strips thick-cut bacon
- 1 medium yellow onion, diced
- 2 medium bell peppers (red and/or green), diced
- 3 cloves garlic, minced
- 4 large eggs
- 1 tablespoon avocado oil or olive oil (optional, depending on bacon fat)
- Salt and black pepper to taste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme or rosemary
- Fresh herbs for garnish (optional)
Instructions
- Wash, peel, and dice the sweet potatoes into ½-inch cubes. Dice the onion and bell peppers into similar-sized pieces. Mince the garlic.
- Place a large skillet or cast iron pan over medium heat. Add the bacon strips and cook for 2-3 minutes per side until crispy.
- Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the pan.
- Add the diced sweet potatoes to the hot grease. Season with salt and pepper. Cook for 5 minutes, stirring occasionally.
- Add the onions and bell peppers to the pan. Continue to cook for 5-7 minutes until potatoes are tender and slightly crispy.
- Add the minced garlic in the last minute of cooking to prevent burning.
- Crumble the cooked bacon and add it back to the pan. Sprinkle with paprika and dried thyme. Stir and cook for 1 minute to meld flavors.
- Make four small wells in the hash. Crack an egg into each well. Cover the pan with a lid and cook for 3-5 minutes until egg whites are set but yolks are still runny.
- Sprinkle with fresh herbs if desired and serve immediately.
Notes
Cut potatoes uniformly for even cooking. Do not crowd the pan to ensure potatoes crisp up rather than steam. If using fatty bacon, you may not need additional oil. Leftovers can be stored in the fridge for up to 4 days; do not freeze as eggs and potatoes do not freeze well.
