Description

  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) white granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (170g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving an overhang on the long sides for easy removal.
  2. In a medium mixing bowl, peel and mash the ripe bananas with a fork until mostly smooth.
  3. Add the melted butter, sugar, egg, and vanilla extract to the mashed bananas. Stir vigorously with a fork until the mixture is glossy and combined.
  4. Add the flour, baking soda, and salt to the wet ingredients. Stir gently just until the flour disappears; do not overmix. A few small lumps are fine.
  5. Gently fold in the chocolate chips using a spatula or fork.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until the top is golden brown, the edges pull away from the pan, and a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment overhang and transfer to a cooling rack to cool completely before slicing.

Notes

Ensure bananas are very ripe (spotty brown or black) for maximum sweetness. Do not overmix the batter once flour is added to avoid a tough texture. For best results, let the bread cool completely before slicing to prevent it from being gummy. Can be stored at room temperature for 3 days or frozen for up to 3 months.
