No Bake Chocolate Eclair Cake

  • Author: Grace
  • Total Time: 6 hours 17 minutes
  • Yield: 12 servings 1x

Description

A creamy, chocolatey no-bake dessert made with just five simple ingredients. Perfect for quick, effortless treats that impress without baking.

Ingredients

Scale
  • 2 packages instant chocolate pudding mix (3.9 oz / 110g each)
  • 4 cups milk (whole milk preferred, 2% works too)
  • 16 oz whipped topping (thawed, store-bought like Cool Whip)
  • About 2 sleeves graham crackers (180g, honey or plain)
  • 1 cup chocolate frosting or chocolate chips (150g)

Instructions

  1. In a large bowl, whisk together the instant chocolate pudding mix and milk. Use an electric mixer if available for a smooth texture. Let sit for about 5 minutes to thicken.
  2. Gently fold the thawed whipped topping into the pudding mixture with a spatula until fully combined but still light and fluffy.
  3. Spread a thin layer of the pudding mixture on the bottom of a 9×13-inch baking dish. Arrange graham crackers in a single layer over it, breaking as needed to fill gaps. Repeat layering pudding and graham crackers two more times, ending with a pudding layer on top.
  4. If using chocolate chips, melt them gently with a tablespoon of butter in the microwave, stirring every 20 seconds until smooth and glossy. Spread evenly over the top pudding layer. Alternatively, spread store-bought chocolate frosting on top.
  5. Cover the dish with plastic wrap and refrigerate for at least 6 hours or overnight to allow the graham crackers to soften and flavors to meld.
  6. Slice into squares and serve chilled.

Notes

Do not rush chilling time; pudding needs at least 6 hours to set and crackers to soften. Use whole milk for best pudding texture. Fold whipped topping gently to keep mixture light. Chocolate topping can be sprinkled with nuts or mini chocolate chips for variation. Make ahead for best results. Store leftovers covered in fridge up to 4 days; do not freeze or reheat.
