Description

A quick and easy weeknight dinner solution that uses rotisserie chicken, grapes, and celery mixed with a light mayo-yogurt dressing, served on toasted buttery croissants.


Ingredients

  • 2 cups shredded rotisserie chicken (about 300g)
  • 3 tablespoons mayonnaise
  • 3 tablespoons plain Greek yogurt
  • 2 stalks celery, finely diced (about 50g)
  • 1 cup grapes, halved (about 150g)
  • 2 tablespoons red onion, finely minced (about 20g)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill)
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 6 small or 3 large butter croissants, sliced horizontally
  • 2 tablespoons softened butter (for toasting)
  • 1 cup arugula or spinach (optional)

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces. Finely dice the celery, halve the grapes, and mince the red onion.
  2. In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, dried dill, salt, and pepper until smooth.
  3. Add the shredded chicken, diced celery, halved grapes, and minced onion to the bowl. Gently fold until the chicken is evenly coated. Refrigerate for 10 minutes to let flavors meld.
  4. Slice the croissants in half horizontally. Brush the cut sides with softened butter.
  5. Heat a small skillet over medium-low heat. Place croissants cut-side down in the cold skillet and cook for 2-3 minutes until golden brown and crispy.
  6. To assemble, place a small handful of arugula or spinach on the bottom half of the toasted croissant (optional). Spoon a generous amount of chicken salad onto the bottom half and top with the other half.
  7. Serve immediately while the croissants are warm and crispy.

Notes

Toast the croissants to prevent sogginess. Keep the chicken salad refrigerated until serving. For a lighter version, use less mayo and more yogurt. If making ahead, store salad and croissants separately.
