- 4 large boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup sun-dried tomatoes packed in oil, roughly chopped
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh basil, chopped
- Optional: 2 cups fresh spinach
- Optional: 1 red bell pepper, sliced
Instructions
- Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and garlic powder. If thick, pound to 1/2-inch thickness.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove chicken to a plate and set aside.
- Reduce heat to medium. Add minced garlic and red pepper flakes to the pan, stirring for 30-60 seconds until fragrant.
- Add chopped sun-dried tomatoes and let sizzle for 1 minute. Pour in chicken broth, scraping up brown bits from the bottom of the pan.
- Simmer broth for 2 minutes until slightly reduced.
- Lower heat to medium-low. Stir in heavy cream and simmer for 3-4 minutes until sauce thickens slightly.
- Stir in Parmesan cheese until melted. Return chicken and any juices to the pan. Cover and simmer for 5-7 minutes until chicken reaches 165°F internal temperature.
- Remove from heat. Stir in fresh basil. Taste and adjust seasoning. Serve immediately.
Notes
Do not overcook the chicken during the searing step as it will finish cooking in the sauce. Use freshly grated Parmesan to prevent a grainy sauce. If using dry sun-dried tomatoes, rehydrate them in hot water for 10 minutes first. The sauce can thicken in the fridge; loosen with a splash of milk or broth when reheating.
