Description

Ingredients

  • 1 pound (450g) pork sausage (mild, spicy, or turkey sausage)
  • 6 large eggs
  • 68 large flour tortillas (10-inch preferred)
  • 1 ½ cups (150g) shredded sharp cheddar cheese
  • 1 cup (about 150g) diced bell peppers (red, green, or mixed)
  • ½ medium onion (about 75g), diced
  • 2 cloves garlic, minced
  • 1 cup (170g) black beans, drained and rinsed (optional)
  • ½ cup (120ml) salsa
  • Salt and pepper to taste
  • 1 tablespoon (15ml) olive oil or vegetable oil

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of oil. Crumble and cook the sausage until browned and cooked through, about 6-8 minutes. Drain excess fat and set aside.
  2. In the same skillet, sauté diced onion and bell peppers over medium heat until softened and slightly caramelized, about 4-5 minutes. Add minced garlic in the last 30 seconds and stir until fragrant. Season with salt and pepper. If using, add black beans and cook for another minute to warm through.
  3. Lightly beat the eggs with a pinch of salt in a mixing bowl. Push the veggies to one side of the pan and pour eggs into the other side. Scramble gently over low-medium heat until just set but still soft, about 3-4 minutes. Avoid overcooking.
  4. Warm tortillas in the microwave for 20-30 seconds or in a dry skillet for a few seconds on each side to make them pliable.
  5. Divide the sausage, veggie-egg mixture, shredded cheese, and salsa evenly among the tortillas, spooning everything onto the center.
  6. Fold in the sides of each tortilla and roll tightly from the bottom up to form burritos. Optionally, toast burritos seam-side down in the skillet for 1-2 minutes to seal and crisp the outside.
  7. Serve immediately with extra salsa or hot sauce on the side.

Notes

Do not overcook the eggs to keep them soft and tender. Warm tortillas before rolling to prevent cracking. Freeze extra burritos individually wrapped in foil for easy reheating. Customize heat with red pepper flakes, jalapeños, or pepper jack cheese. Toast burritos seam-side down to seal and add crispness.
