- 1.5 pounds large shrimp (peeled, deveined, and patted dry)
- 2 tablespoons lemon pepper seasoning
- 2 tablespoons vegetable oil or olive oil
- 4 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
- 8–10 wooden skewers (soaked in water for 20–30 minutes)
Instructions
- Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 20-30 minutes.
- Place the dried shrimp in a medium bowl. Drizzle with oil and sprinkle with lemon pepper seasoning. Toss to coat evenly.
- Thread 4-5 shrimp onto each skewer, placing them in a zigzag pattern (tail to tail) to hold them securely.
- In a small saucepan over low heat, melt the butter. Stir in garlic powder, lemon juice, and red pepper flakes. Keep warm.
- Lightly oil the grill grates. Place skewers on the grill and cook for 2-3 minutes on the first side until pink and opaque.
- Flip skewers carefully. Brush with half of the garlic butter sauce and cook for another 2-3 minutes on the second side.
- Brush with remaining sauce. Remove from grill immediately when shrimp are pink, opaque, and slightly charred.
- Serve immediately garnished with fresh parsley and lemon wedges.
Notes
Do not overcook the shrimp; they turn rubbery if cooked too long. They are done when pink and opaque. Ensure shrimp are completely dry before seasoning to achieve a good sear. If using frozen shrimp, thaw completely and pat dry. For oven cooking, bake at 400°F for 8-10 minutes, flipping halfway.
