A quick, no-cook summer salad combining sweet watermelon, salty feta, fresh mint, and zesty lime juice. Perfect for busy weeknights when you need dinner in under five minutes.

- 3 cups seedless watermelon, cubed (about 600g)
- 1 cup feta cheese, crumbled (about 150g)
- 1/2 cup fresh mint leaves, chopped (about 15g)
- 2 medium limes, juiced
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon black pepper
- Optional: 2 tablespoons red onion, thinly sliced
- Optional: 1 tablespoon chia seeds
- Optional: 2 strips prosciutto, torn
- Optional: Sea salt, to taste
Instructions
- Prep the watermelon by cutting it into bite-sized cubes (about 1 inch) and placing them in a large mixing bowl.
- Crumble the block of feta cheese over the watermelon using your hands or a fork.
- Chop the fresh mint leaves roughly and sprinkle them over the salad. Add red onion if using.
- Squeeze the juice of two limes over the mixture, then drizzle with olive oil and sprinkle with black pepper.
- Gently toss everything together to coat the ingredients without mashing the melon.
- Serve immediately for the best texture and freshness.
Notes
Do not dress the salad more than 5 minutes before serving to prevent the watermelon from becoming watery. For best results, chill the mixing bowl in the fridge for 10 minutes beforehand. Add lime zest for extra aroma. This salad is best eaten fresh and should not be frozen.
