A simple and delicious summer dessert featuring smoky grilled peaches paired with fluffy shortcakes and whipped cream, perfect for Labor Day cookouts and backyard gatherings.

- 4 large fresh peaches, halved and pitted
- 2 cups (250g) all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup (50g) granulated sugar
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, cold and cubed
- 3/4 cup (180ml) heavy cream (for dough)
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- 1/2 cup (120ml) heavy cream (for whipping)
- 1/2 teaspoon ground cinnamon (optional)
- Oil or melted butter for brushing peaches
Instructions
- Wash peaches and cut in half. Remove pits carefully. Sprinkle cinnamon on cut sides if using.
- Preheat oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Add cold, cubed butter and cut into flour mixture using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized bits of butter.
- Pour in 3/4 cup heavy cream and stir with a spatula until dough just comes together. Do not overmix.
- Turn dough onto a lightly floured surface and pat into a 1-inch thick rectangle. Cut out 8-10 rounds using a biscuit cutter or glass.
- Place rounds on a parchment-lined baking sheet. Brush tops with a little cream and sprinkle with sugar.
- Bake for 12-15 minutes until puffed and golden brown. Let cool slightly on a wire rack.
- Heat grill or grill pan to medium-high. Brush peach halves with oil or melted butter to prevent sticking.
- Place peaches cut side down on grill. Grill 3-4 minutes until grill marks appear and peaches soften but hold shape.
- Flip peaches and grill skin side for 2 more minutes. Remove from heat.
- In a chilled bowl, pour remaining 1/2 cup heavy cream. Add vanilla extract and powdered sugar.
- Whip cream with mixer or whisk until soft peaks form.
- Slice shortcakes in half horizontally. Spoon grilled peaches on bottom half, add whipped cream, then top with other shortcake half and more whipped cream if desired.
- Serve immediately while peaches are slightly warm.
Notes
Use ripe but firm peaches to hold up on the grill. Cold butter is essential for flaky shortcakes. Whip cream last for best volume. Store-bought biscuits can be used as a shortcut. Coconut cream can be used as a dairy-free whipped cream alternative. Leftover shortcakes freeze well; peaches and whipped cream do not freeze well.
