Description

  • 810 wooden skewers
  • 1/2 cup honey
  • 23 chipotle peppers in adobo sauce (plus 2 tablespoons sauce)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons fresh lime juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Optional: Red onion wedges and bell pepper chunks for skewering

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Trim excess fat from chicken thighs and cut into 1.5-inch uniform cubes.
  3. In a medium bowl, whisk together honey, minced chipotle peppers, adobo sauce, soy sauce, lime juice, garlic, cumin, salt, and black pepper.
  4. Add chicken cubes to the marinade, toss to coat, cover, and refrigerate for 20 minutes to 2 hours.
  5. Preheat grill to medium-high heat (approx. 400°F / 200°C).
  6. Thread chicken onto skewers, leaving space between pieces. Alternate with vegetables if desired.
  7. Oil grill grates lightly. Place skewers on the grill and cook for 6-7 minutes on the first side without moving.
  8. Flip skewers and cook for another 6-7 minutes until internal temperature reaches 165°F.
  9. During the last 2 minutes, brush with extra glaze for caramelization.
  10. Remove from grill and let rest for 5 minutes before serving.

Notes

Do not use chicken breast as it dries out easily; thighs stay juicy. Soak wooden skewers to prevent fire. Do not marinate longer than 4 hours to avoid mushy texture. Save a portion of marinade before adding raw chicken if you want a dipping sauce, and boil it for 2 minutes to kill bacteria. Keep grill heat at medium-high to prevent honey from burning.
