A creamy, hearty, and ridiculously simple one-pan chicken and dumplings recipe using buttermilk biscuits. Perfect for busy weeknights, this meal uses leftover rotisserie chicken and cooks in just 30 minutes.

- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream

- ½ teaspoon paprika
- Salt and black pepper to taste
- 1 box (16.3 oz) buttermilk biscuit mix (e.g., Jiffy)
- ½ cup buttermilk
- 2 cups shredded rotisserie chicken
- ½ cup frozen peas (optional)
Instructions
- Melt butter in a large skillet or Dutch oven over medium heat. Add diced onion, carrots, and celery; cook for 5 minutes until softened and translucent.
- Add minced garlic, dried thyme, and paprika; stir for 1 minute until fragrant. Add shredded rotisserie chicken and stir to warm through.
- Pour in chicken broth and heavy cream. Stir to combine and bring to a gentle simmer. Simmer uncovered for 10 minutes until carrots are tender. Season with salt and pepper to taste.
- While broth simmers, prepare biscuit dough by mixing the biscuit mix with buttermilk according to package directions (or making from scratch). Do not overmix.
- Drop spoonfuls or scoops of biscuit dough directly into the simmering broth. Do not crowd the pot.
- Cover the pot with a lid, reduce heat to medium-low, and steam dumplings for 12-15 minutes without lifting the lid.
- Check that dumplings are cooked through. Remove lid, stir gently, and add frozen peas if using. Serve immediately.
Notes
Do not overmix the dough to avoid tough dumplings. Keep the lid on while steaming to ensure proper cooking. Use cold buttermilk for flakier biscuits. The dish does not freeze well due to the dumplings and cream sauce; best made fresh. Leftovers keep in the fridge for up to 3 days.
