Ingredients
- 3 cups shredded rotisserie chicken (or leftover roasted chicken)
- 1/2 cup plain Greek yogurt (full-fat or 2%)
- 2 tablespoons mayonnaise
- 1 cup seedless grapes, halved
- 2 stalks celery, finely diced
- 2 tablespoons red onion, finely minced
- 1/4 cup walnuts, chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon salt
- Generous crack of black pepper
- Optional: 1/2 cup crispy bacon, crumbled
- Optional: 2 tablespoons fresh parsley or dill, chopped
Instructions
- Shred the chicken into bite-sized pieces using your hands or two forks and place it in a large mixing bowl.
- Halve the grapes, finely dice the celery, and mince the red onion. If the onion is too strong, soak it in ice water for 5 minutes and drain.
- Optional: Toast the walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant, then let cool.
- In a small bowl or directly in the large mixing bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, dried tarragon, salt, and pepper until smooth.
- Add the shredded chicken, halved grapes, diced celery, minced onion, and chopped walnuts to the dressing.
- Gently toss everything together until evenly coated, being careful not to crush the grapes.
- Chill in the refrigerator for at least 15 minutes to allow flavors to meld before serving.
Notes
For best results, use full-fat Greek yogurt for creaminess. If using low-fat yogurt, add a tablespoon of olive oil. The salad improves after sitting in the fridge for a few hours. Do not freeze, as the yogurt and grapes will become watery and mushy. Store in an airtight container in the refrigerator for up to 4 days.
