Description

A quick and elegant summer salad featuring grilled peaches, creamy burrata, and fresh basil oil. This recipe takes only 15 minutes to prepare and is perfect for busy weeknights.


Ingredients

  • 3 large ripe peaches, halved and pitted
  • 2 balls burrata cheese (78 oz each)
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1 cup fresh basil leaves, packed
  • ½ cup extra virgin olive oil
  • 1 clove garlic, peeled
  • ½ teaspoon kosher salt
  • 2 tablespoons balsamic glaze
  • ¼ cup pine nuts or walnuts, toasted
  • Flaky sea salt, for finishing
  • Freshly cracked black pepper, to taste

Instructions

  1. Wash and halve the peaches, removing the pits. Pat them dry thoroughly to ensure good grill marks.
  2. In a blender, combine fresh basil leaves, olive oil, garlic clove, and salt. Blend on high until smooth. Set aside.
  3. Heat a grill or grill pan over medium-high heat. Place peach halves cut-side down on the grill.
  4. Grill peaches for 2-3 minutes until char marks appear and they release easily. Flip and cook for 1 more minute. Remove from heat.
  5. In a large bowl, toss mixed greens with a drizzle of the basil oil.
  6. Arrange greens on a serving platter. Tear burrata into chunks and place on top of the greens.
  7. Place grilled peaches on top of the burrata.
  8. Drizzle with remaining basil oil and balsamic glaze.
  9. Sprinkle with toasted nuts, flaky sea salt, and freshly cracked black pepper.
  10. Serve immediately.
