Description
A quick and refreshing frozen pina colada made with fresh pineapple, creamy coconut milk, and rum. Perfect for summer afternoons and easy to customize.

- 2 cups frozen pineapple chunks (300g)
- 1 cup full-fat canned coconut milk (240ml)
- 1/2 cup white rum (120ml)
- 2 tablespoons fresh lime juice (30ml)
- 2 tablespoons simple syrup (30ml)
- 1 cup ice cubes (about 150g)
- Pineapple wedges or chunks for garnish
Instructions
- If using fresh pineapple, cut into chunks and freeze for at least 2 hours. Juice limes fresh and set aside.
- Add frozen pineapple chunks, coconut milk, white rum, lime juice, simple syrup, and ice cubes to a blender.
- Blend on low speed, then increase to high until smooth and creamy with no large ice chunks. Adjust consistency by adding coconut milk or ice cubes as needed.
- Taste and adjust sweetness or tartness by adding more simple syrup or lime juice if desired.
- Pour into glasses and garnish with pineapple wedges or chunks. Optionally, add a maraschino cherry or a paper umbrella.
Notes
Use frozen pineapple for the best icy texture. Full-fat canned coconut milk is essential for creaminess. Adjust sweetness after blending. Chill glasses before serving for a colder drink. Avoid too much ice to prevent dilution. Leftovers can be frozen but are best fresh.
