Description

  • 8 oz block cream cheese, softened and cubed
  • 1 cup ranch dressing (full-fat recommended)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 23 stalks green onions, chopped
  • Crackers or chips for serving

Instructions

  1. Shred the rotisserie chicken, discarding skin and bones, until you have 2 cups of bite-sized pieces.
  2. Cut the block cream cheese into small cubes and let it sit at room temperature for 15 minutes or microwave in 30-second intervals until soft but not melted.
  3. In a large mixing bowl, combine the softened cream cheese, ranch dressing, and buffalo wing sauce. Stir vigorously until smooth and lump-free.
  4. Stir in the shredded chicken and half of the mozzarella and cheddar cheese until the chicken is evenly coated.
  5. Transfer the mixture to a slow cooker. Cook on low for 15-20 minutes, stirring halfway through, until hot and bubbly. Alternatively, heat in a large skillet over medium-low heat, stirring frequently.
  6. Once hot, sprinkle the remaining cheese on top. Cover the slow cooker for 1-2 minutes to melt the cheese, or broil in an oven-safe dish for 2-3 minutes until golden and bubbly.
  7. Garnish with chopped green onions and serve immediately with crackers or chips.

Notes

Do not use whipped cream cheese in a tub as it will make the dip runny. Ensure the cream cheese is softened to avoid lumps. If the dip is too thin, add more chicken or cream cheese. If too thick, add a splash of ranch or milk. This dip does not freeze well due to the dairy content.
