- 12–15 medium jalapeño peppers
- 8 oz (225g) full-fat cream cheese, softened
- 1 cup (100g) sharp cheddar cheese, shredded
- 4 stalks green onions, finely chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1 pound (450g) thick-cut bacon
- 1 tablespoon brown sugar (optional)
- BBQ sauce or spicy mustard for dipping
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
- Wash and dry the jalapeños. Slice them in half lengthwise. Remove seeds and white membrane using a spoon or finger (wear gloves). Discard seeds.
- In a small bowl, combine softened cream cheese, shredded cheddar, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until smooth.
- Press a teaspoon of the cheese mixture firmly into each jalapeño half.
- Wrap a slice of bacon around each stuffed jalapeño, spiraling from one end to the other. Secure the end with a toothpick if necessary.
- Place poppers on the prepared baking sheet, ensuring they are not touching.
- Bake for 20-25 minutes until bacon is crispy and golden brown and cheese is bubbly. If bacon browns too quickly, cover loosely with foil for the last 5 minutes.
- Let cool for 5 minutes before serving. Sprinkle with brown sugar before baking if desired.
- Serve with BBQ sauce or spicy mustard for dipping.
Notes
Wear gloves when handling jalapeños to avoid skin irritation. For extra crispy bacon, use a wire rack on the baking sheet. These can be assembled ahead of time and refrigerated for up to 24 hours, or frozen uncooked for later baking. Reheat in an air fryer at 350°F for best texture.
