- 1.5 lbs (700g) ground beef (80/20 lean-to-fat ratio)
- 16 oz jarred nacho cheese sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 tablespoon chili powder (blend with cumin and garlic)
- 2 cups (200g) shredded Mexican blend cheese
- 1 small can sliced jalapeños
- 4 stalks green onions, chopped
- 1 small can sliced black olives
- 1 cup (240ml) medium or chunky salsa
- Guacamole or sour cream (for serving)
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with foil or parchment paper and lightly spray with cooking spray.
- Arrange tortilla chips in a single layer on the sheet pan, overlapping slightly to cover the surface without piling high.
- Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until browned and no pink remains.
- Drain excess grease from the beef. Stir in chili powder and black beans. Heat through for 1 minute, then remove from heat.
- Pour the jarred nacho cheese sauce evenly over the chips, spreading it to ensure coverage.
- Spread the seasoned beef mixture evenly over the cheese. Scatter sliced jalapeños and black olives over the meat.
- Top everything with the shredded Mexican blend cheese, covering the entire surface.
- Bake for 5-8 minutes until the cheese is bubbly and golden brown. Keep an eye on it after 5 minutes to prevent burning.
- Remove from oven and immediately sprinkle with chopped green onions. Let sit for 2 minutes to allow cheese to set.
- Serve immediately with salsa, guacamole, and sour cream on the side.
Notes
Use thick, restaurant-style chips to prevent sogginess. Do not bake guacamole; add it fresh upon serving. For a leaner option, use 90/10 beef or ground turkey. If using a smaller pan, you may need to bake in two batches. Leftovers can be stored in the fridge for up to 2 days and reheated in the oven at 350°F.
