Fluffy Scrambled Eggs with Chive Butter

  • Author: Grace
  • Total Time: 9-11 minutes
  • Yield: 2 servings 1x

Description

A quick and comforting recipe for fluffy scrambled eggs enhanced with creamy chive butter, perfect for busy weeknights. Soft, pillowy eggs with a subtle oniony freshness from chives make this dish feel special and homemade.

Ingredients

Scale
  • 4 large eggs
  • 3 tablespoons (45g) unsalted butter
  • 2 tablespoons (30ml) whole milk or heavy cream
  • 2 tablespoons (about 6g) fresh chives, finely chopped
  • ½ teaspoon salt
  • Freshly ground black pepper, a pinch (optional)
  • Optional add-ins: ½ cup (50g) shredded sharp cheddar or gruyère cheese
  • Optional add-ins: ½ cup cherry tomatoes, halved
  • Optional add-ins: 1 cup baby spinach

Instructions

  1. Finely chop the fresh chives and set aside.
  2. Crack the eggs into a mixing bowl, add the milk or cream, salt, and a pinch of pepper. Whisk vigorously until smooth and slightly frothy.
  3. Place a non-stick skillet over low heat and add 1 tablespoon of butter. Let it melt gently without browning.
  4. Pour in the egg mixture once the butter is melted and slightly bubbly but not sizzling.
  5. Slowly stir the eggs with a rubber spatula in small circles, scraping the bottom and sides of the pan to prevent sticking. Keep the heat low and cook until soft curds form, about 4-5 minutes.
  6. When the eggs are mostly cooked but still slightly wet, stir in the remaining 2 tablespoons of butter and the chopped chives. Fold gently.
  7. Remove from heat immediately to avoid overcooking.
  8. Serve immediately with a sprinkle of flaky sea salt and extra chives if desired.

Notes

Use low heat and slow stirring to keep eggs tender and creamy. Softened butter melts evenly and improves texture. Fresh chives provide the best flavor. Avoid overwhisking eggs to maintain fluffiness. Room temperature eggs cook more evenly. Salt eggs before cooking to keep them tender. Reheat gently with milk or cream to preserve texture.
