  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • ¼ teaspoon salt (for coating)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Simmer for 10-15 minutes until reduced to ½-¾ cup of syrupy liquid. Let cool completely.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, ½ teaspoon salt, 1 teaspoon cinnamon, and nutmeg.
  3. In another bowl, whisk the melted butter, ¾ cup sugar, egg, vanilla, and the cooled reduced apple cider until smooth.
  4. Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until just combined. Do not overmix.
  5. Preheat oven to 350°F (175°C). Grease a donut pan generously.
  6. Spoon batter into the molds, filling them about ¾ full.
  7. Bake for 10-12 minutes or until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
  8. Mix the coating ingredients: ½ cup sugar, 1 tablespoon cinnamon, and ¼ teaspoon salt.
  9. While donuts are still warm, roll them in the cinnamon sugar mixture to coat.

Notes

Ensure the reduced apple cider is completely cool before mixing with the egg to avoid scrambling it. Do not overmix the batter to keep the donuts tender. If you don’t have a donut pan, you can bake in a muffin tin and poke a hole in the center with a chopstick. Store leftovers in an airtight container at room temperature for up to 2 days.
