Description

  • 1/2 cup (120g) caramel apple pie filling
  • 1 medium Granny Smith apple, diced small
  • 1 teaspoon cinnamon (for rolling mixture)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, 1/2 cup granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Add the egg and vanilla extract; mix until just combined.
  4. In a separate bowl, whisk together flour, baking soda, 1 teaspoon cinnamon, cream of tartar, and salt.
  5. Pour dry ingredients into the wet mixture and mix on low speed until just combined.
  6. Fold in diced apples and caramel apple filling until evenly distributed.
  7. Roll dough into balls using a tablespoon, then dip tops into a mixture of remaining granulated sugar and 1 teaspoon cinnamon.
  8. Place cookies on prepared baking sheets, spaced 2 inches apart.
  9. Bake for 10-12 minutes until edges are set and lightly golden but centers look soft.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure butter is room temperature, not melted. Dice apples into 1/4-inch cubes to ensure they cook through. Do not overbake; cookies will firm up as they cool. Store in an airtight container with a slice of bread to maintain softness.
