  • 2 cups cooked chicken, shredded or diced (about 300g)
  • 3 cups green cabbage, shredded (about 200g)
  • 1 cup carrots, shredded (about 100g)
  • 1 medium red bell pepper, thinly sliced (about 150g)
  • 3 green onions, sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup roasted peanuts, chopped (about 70g)
  • ¼ cup peanut butter (60g)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ½ teaspoon red pepper flakes
  • 24 tablespoons warm water

Instructions

  1. Shred the cabbage and carrots. Thinly slice the red bell pepper and green onions. Chop the cilantro and roughly chop the roasted peanuts. Shred or dice the cooked chicken into bite-sized pieces.
  2. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, lime juice, minced garlic, grated ginger, and red pepper flakes. Add warm water one tablespoon at a time until the dressing is silky and pourable but thick enough to coat the salad.
  3. In a large mixing bowl, combine shredded cabbage, carrots, bell pepper, green onions, cilantro, and chicken. Pour the peanut dressing over and toss until well coated.
  4. Just before serving, sprinkle chopped roasted peanuts over the salad for added crunch.

Notes

Keep dressing separate from salad if prepping ahead to avoid sogginess. Toast peanuts for enhanced flavor. Adjust red pepper flakes to taste. Double the dressing for extra use. Substitute chicken with tofu or chickpeas for vegan version. Use tamari for gluten-free option.
