  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 1/2 cup sun-dried tomatoes, chopped (about 80g), preferably jarred in oil
  • 4 cloves garlic, minced (about 1 tablespoon)
  • 1 cup heavy cream (240 ml), full-fat
  • 1/2 cup freshly grated Parmesan cheese (about 50g)
  • Optional: 2 cups fresh spinach
  • Optional: 1 teaspoon Italian seasoning

Instructions

  1. Mince the garlic and chop the sun-dried tomatoes into bite-sized pieces. Grate the Parmesan cheese. If using, wash and roughly chop the fresh spinach.
  2. Place the chicken breasts in a single layer at the bottom of the crockpot.
  3. Sprinkle the chopped sun-dried tomatoes and minced garlic evenly over the chicken.
  4. Pour the heavy cream over the chicken and tomatoes.
  5. Sprinkle the grated Parmesan cheese on top without stirring. Add Italian seasoning if desired.
  6. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours if short on time.
  7. About 15 minutes before serving, add the fresh spinach and gently stir to combine. Let the spinach wilt.
  8. Serve the creamy Tuscan chicken over pasta, rice, or mashed potatoes. Spoon extra sauce on top and sprinkle with more Parmesan if desired.

Notes

Use freshly grated Parmesan cheese for best sauce texture. Full-fat heavy cream is essential for a rich, creamy sauce. Cook on low for best texture and flavor. Add spinach at the end to avoid mushiness. Leftovers reheat well with a splash of cream or milk. Avoid substituting milk for cream as sauce won’t thicken properly.
