Ingredients
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder

- 2 large eggs, separated
- 1¾ cups (420ml) whole milk
- 6 tablespoons (85g) unsalted butter, melted
- 1 teaspoon pure vanilla extract
- For the maple butter:
- ½ cup (115g) unsalted butter, softened
- 3 tablespoons pure maple syrup
- A pinch of salt
Instructions
- Prep Your Ingredients (10 minutes): Separate eggs into yolks and whites. Sift together flour, baking powder, sugar, and salt in a large mixing bowl. Melt butter and let cool slightly. Measure milk and vanilla.
- Make the Batter Base (5 minutes): Add egg yolks, melted butter, milk, and vanilla extract to dry ingredients. Whisk until just combined; a few lumps are okay.
- Whip the Egg Whites (5 minutes): Using an electric hand mixer, beat egg whites until stiff peaks form.
- Fold Egg Whites into Batter (2 minutes): Gently fold whipped egg whites into batter with a rubber spatula until no white streaks remain.
- Heat the Waffle Iron and Cook (10-15 minutes): Preheat waffle iron and brush with melted butter. Pour about ½ cup batter onto iron, close lid, and cook 4-5 minutes until deep golden brown and crisp.
- Make the Maple Butter (5 minutes): Mix softened butter, maple syrup, and a pinch of salt until creamy and smooth. Store at room temperature until serving.
- Serve and Enjoy: Stack waffles, spread maple butter on top, and add optional toppings like fresh fruit, nuts, or powdered sugar.

Do not skip whipping egg whites for light waffles. Use room temperature ingredients for smoother batter. Preheat waffle iron fully and brush with butter for best crispiness.
