Ingredients

  • 2 medium English cucumbers, sliced (about 300g / 10.5 oz)
  • 1½ cups cherry tomatoes, halved (about 225g / 8 oz)
  • ½ medium red onion, thinly sliced (about 75g / 2.6 oz)
  • ½ cup kalamata olives, pitted and halved (about 75g / 2.6 oz)
  • 4 ounces feta cheese, crumbled (115g)
  • 2 tablespoons fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 clove garlic, minced
  • ⅓ cup extra virgin olive oil (80ml / 2.7 fl oz)
  • ¼ cup fresh squeezed lemon juice (60ml / 2 fl oz)
  • 1 tablespoon red wine vinegar (15ml / 0.5 fl oz)
  • Salt and black pepper, to taste

Instructions

  1. Slice cucumbers and halve cherry tomatoes.
  2. Thinly slice red onion and soak in cold water for 10 minutes to mellow the bite.
  3. Whisk together lemon juice, olive oil, minced garlic, chopped oregano, red wine vinegar, salt, and pepper in a small bowl or jar.
  4. Drain onions and pat dry with paper towels.
  5. In a large bowl, combine cucumbers, tomatoes, onions, and kalamata olives.
  6. Pour about two-thirds of the dressing over the veggies and toss gently to coat.
  7. Sprinkle crumbled feta cheese on top and gently toss again to distribute.
  8. Taste and add remaining dressing if desired.
  9. Serve immediately for best freshness and crispness.

Notes

Soak red onions in cold water to mellow sharpness. Salt cucumbers lightly and let sit 5 minutes before assembling to keep salad crisp. Make dressing ahead and store separately for up to 3 days. Keep veggies and dressing separate if prepping ahead to avoid sogginess. Use fresh oregano for best flavor; if using dried, add it to dressing 10 minutes before tossing.
