  • 6 ounces (about 170g) bittersweet or semisweet chocolate (at least 60% cocoa)
  • 1 ½ cups (360ml) heavy cream, divided
  • 3 large eggs, separated
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: extra whipped cream, chocolate shavings, fresh berries, sprinkle of sea salt

Instructions

  1. Chop chocolate into small pieces. Melt chocolate in a heatproof bowl over simmering water (double boiler), stirring until smooth and glossy. Remove from heat and let cool slightly (about 5 minutes).
  2. In a clean, dry bowl, beat egg whites with a pinch of salt until soft peaks form. Slowly add half the sugar while whipping until stiff, glossy peaks form.
  3. In a separate bowl, beat 1 cup of heavy cream with remaining sugar and vanilla extract until soft peaks form. Do not overwhip.
  4. Whisk egg yolks until smooth. Slowly pour the slightly cooled melted chocolate into the yolks, stirring constantly to combine.
  5. Fold whipped cream gently into the chocolate and yolk mixture. Then carefully fold in the whipped egg whites bit by bit, preserving as much air as possible.
  6. Divide mousse into serving dishes, cover with plastic wrap, and refrigerate for at least 2 hours or overnight.
  7. Before serving, whip remaining ½ cup heavy cream to soft peaks and dollop on top. Optionally, garnish with chocolate shavings or fresh berries.

Notes

Use room temperature eggs for better whipping. Let melted chocolate cool before mixing with eggs to avoid scrambling. Fold mixtures gently to keep mousse light and airy. Whip cream to soft peaks only to avoid turning it into butter. Chill mousse at least 2 hours or overnight for best texture. Use pasteurized eggs or cooked custard base for safer alternative to raw eggs.
