Chewy White Chocolate Macadamia Cookies

  • Author: Grace
  • Total Time: 29 minutes
  • Yield: 24 cookies 1x

Description

These chewy white chocolate macadamia cookies feature soft centers and chewy edges, combining rich buttery flavor with crunchy toasted macadamia nuts and melty white chocolate. Perfect for sharing and easy to make with simple pantry ingredients.

Ingredients

Scale
  • 1 cup (2 sticks, 225g) unsalted butter, softened
  • 1 cup (200g) packed brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) white chocolate chips
  • 1 cup (140g) macadamia nuts, roughly chopped and toasted

Instructions

  1. Preheat oven to 350°F (175°C). Toast macadamia nuts in a dry skillet over medium heat for about 5 minutes, stirring often. Let cool.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.
  3. Beat in eggs one at a time, mixing well after each addition. Add vanilla extract and mix until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing on low speed just until combined. Avoid over-mixing.
  5. Fold in white chocolate chips and toasted macadamia nuts using a spatula until evenly distributed.
  6. Line baking sheets with parchment paper. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart.
  7. Bake for 12 to 14 minutes until edges are lightly browned but centers still look soft. Remove from oven and let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overbake; remove cookies when edges are set but centers still look slightly underdone to keep soft centers. Use room temperature ingredients for best texture. Toast macadamia nuts for enhanced flavor and crunch. Dough can be frozen in balls for baking fresh cookies later; add 1-2 minutes to baking time if baking from frozen. Store cooled cookies in an airtight container with a slice of bread to maintain softness.
