Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, combine softened butter, granulated sugar, and brown sugar. Mix with a fork until smooth and creamy.
- Add the egg and vanilla extract to the butter mixture and stir vigorously until fully combined.
- Add the peanut butter to the bowl and stir until completely incorporated.
- Add the flour, baking soda, and salt to the wet mixture. Stir until just combined, being careful not to overmix.
- Add the old-fashioned oats and stir until evenly distributed. Fold in optional add-ins like chocolate chips if using.
- Scoop dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown but centers still look slightly soft.
- Immediately remove from oven and sprinkle flaky sea salt over the hot cookies.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to set.
Notes
Use old-fashioned oats, not instant, for the best chewy texture. Ensure butter is softened but not melted. Do not overbake; cookies continue to cook on the hot pan. Store in an airtight container with a slice of bread to maintain softness.
