Description
These chewy double chocolate cookies feature rich fudgy centers and chewy edges, made with simple ingredients and baked in under 30 minutes. Perfect for a quick chocolate fix that’s kid-approved and great for gifting.
Ingredients
- ½ cup (50g) unsweetened cocoa powder (preferably Dutch-processed)
- 1 ¼ cups (160g) all-purpose flour, sifted
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ½ cup (110g) light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 cup (170g) semisweet chocolate chips (mix of regular and mini chips)
Instructions
- Measure and sift together cocoa powder, flour, baking soda, and salt to avoid lumps.
- Cream the softened butter with granulated sugar and brown sugar using a mixer until light and fluffy, about 3 minutes.
- Mix in the egg and vanilla extract until just combined and the batter looks glossy and smooth.
- Slowly add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Avoid overmixing.
- Gently fold in the chocolate chips evenly without overbeating the batter.
- Use a cookie scoop or spoon to drop dough balls onto prepared baking sheets spaced about 2 inches apart. Chill the dough in the fridge for at least 10 minutes.
- Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until edges look set but centers remain soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely or serve warm.
Notes
Chill dough for at least 10 minutes to prevent spreading and keep centers fudgy. Do not overbake; cookies should look slightly underdone in the center when removed from oven. Use a mix of regular and mini chocolate chips for gooey pockets. Softened butter (not melted) is essential for chewy texture. For extra fudginess, add 1 tablespoon molasses or swap half the butter for browned butter. Store cookies in an airtight container with a slice of bread to maintain moisture. Dough can be frozen and baked from frozen with extra bake time.
