Chewy Double Chocolate Cookies Recipe With Rich Fudgy Centers Made Easy

  • Author: Grace
  • Total Time: 27 minutes
  • Yield: 24 cookies 1x

Description

These chewy double chocolate cookies feature rich fudgy centers and chewy edges, made with simple ingredients and baked in under 30 minutes. Perfect for a quick chocolate fix that’s kid-approved and great for gifting.

Ingredients

Scale
  • ½ cup (50g) unsweetened cocoa powder (preferably Dutch-processed)
  • 1 ¼ cups (160g) all-purpose flour, sifted
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (110g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (170g) semisweet chocolate chips (mix of regular and mini chips)

Instructions

  1. Measure and sift together cocoa powder, flour, baking soda, and salt to avoid lumps.
  2. Cream the softened butter with granulated sugar and brown sugar using a mixer until light and fluffy, about 3 minutes.
  3. Mix in the egg and vanilla extract until just combined and the batter looks glossy and smooth.
  4. Slowly add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Avoid overmixing.
  5. Gently fold in the chocolate chips evenly without overbeating the batter.
  6. Use a cookie scoop or spoon to drop dough balls onto prepared baking sheets spaced about 2 inches apart. Chill the dough in the fridge for at least 10 minutes.
  7. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until edges look set but centers remain soft.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely or serve warm.

Notes

Chill dough for at least 10 minutes to prevent spreading and keep centers fudgy. Do not overbake; cookies should look slightly underdone in the center when removed from oven. Use a mix of regular and mini chocolate chips for gooey pockets. Softened butter (not melted) is essential for chewy texture. For extra fudginess, add 1 tablespoon molasses or swap half the butter for browned butter. Store cookies in an airtight container with a slice of bread to maintain moisture. Dough can be frozen and baked from frozen with extra bake time.
