Ingredients
- 1 pound (450g) breakfast sausage (mild pork or turkey sausage)
- 8 large eggs
- 1 ½ cups (360ml) whole milk
- 2 cups (200g) shredded sharp cheddar cheese
- 6 cups cubed day-old bread (about 6 slices white or sourdough)
- 1 small yellow onion, diced (about 100g)
- 1 teaspoon garlic powder
- Salt to taste (about 1 teaspoon)
- Black pepper to taste (about ½ teaspoon)
- Optional add-ins: diced bell peppers, chopped spinach, or mushrooms
Instructions
- Heat a large skillet over medium heat and add the sausage, breaking it up with a spoon. Brown for about 5 minutes.
- Add the diced onion to the skillet and cook together with the sausage for another 3 minutes until the onion softens and becomes translucent.
- While the sausage cools slightly, whisk together the eggs, milk, garlic powder, salt, and pepper in a large mixing bowl until combined and frothy.
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- Spread the cubed bread evenly in the baking dish.
- Sprinkle the cooked sausage and onion mixture evenly over the bread.
- Pour the egg mixture evenly over the bread and sausage, ensuring all bread is soaked.
- Sprinkle the shredded cheddar cheese evenly on top.
- Optional: Cover and refrigerate for 20-30 minutes or overnight to let the bread soak the egg mixture fully.
- Preheat oven to 350°F (175°C). Bake uncovered for 40-45 minutes until the top is golden brown, eggs are set, and a toothpick inserted comes out clean.
- Let the casserole rest for 5 minutes before cutting and serving.
Notes
Use day-old bread to prevent sogginess. Letting the casserole soak before baking improves texture. Season well with salt and pepper. Avoid overbaking to prevent dry edges.
