  • 2 cups (200g) shredded sharp cheddar cheese
  • 6 cups cubed day-old bread (about 6 slices white or sourdough)
  • 1 small yellow onion, diced (about 100g)
  • 1 teaspoon garlic powder
  • Salt to taste (about 1 teaspoon)
  • Black pepper to taste (about ½ teaspoon)
  • Optional add-ins: diced bell peppers, chopped spinach, or mushrooms

Instructions

  1. Heat a large skillet over medium heat and add the sausage, breaking it up with a spoon. Brown for about 5 minutes.
  2. Add the diced onion to the skillet and cook together with the sausage for another 3 minutes until the onion softens and becomes translucent.
  3. While the sausage cools slightly, whisk together the eggs, milk, garlic powder, salt, and pepper in a large mixing bowl until combined and frothy.
  4. Grease a 9×13-inch baking dish with butter or non-stick spray.
  5. Spread the cubed bread evenly in the baking dish.
  6. Sprinkle the cooked sausage and onion mixture evenly over the bread.
  7. Pour the egg mixture evenly over the bread and sausage, ensuring all bread is soaked.
  8. Sprinkle the shredded cheddar cheese evenly on top.
  9. Optional: Cover and refrigerate for 20-30 minutes or overnight to let the bread soak the egg mixture fully.
  10. Preheat oven to 350°F (175°C). Bake uncovered for 40-45 minutes until the top is golden brown, eggs are set, and a toothpick inserted comes out clean.
  11. Let the casserole rest for 5 minutes before cutting and serving.

Notes
