Description
A quick and flavorful weeknight dinner featuring salmon fillets blackened with Cajun seasoning and finished with a rich garlic butter sauce. Ready in about 25 minutes, it’s a healthy and satisfying meal perfect for busy evenings.
Ingredients
- 4 salmon fillets (about 6 oz / 170g each), skin-on or skinless
- 2 tablespoons Cajun seasoning (store-bought or homemade blend of paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and black pepper)
- 4 tablespoons (60g) unsalted butter
- 4 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon (15ml) lemon juice
- 2 tablespoons (30ml) olive oil
- Salt to taste (preferably kosher salt)
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Pat the salmon fillets dry with paper towels to help the seasoning stick and form a crust.
- Sprinkle both sides of the salmon generously with Cajun seasoning and a pinch of salt.
- In a small bowl, mix the melted butter, minced garlic, and lemon juice to make the garlic butter sauce. Set aside.
- Heat a large skillet or cast iron pan over medium-high heat until very hot.
- Add olive oil and swirl to coat the pan.
- Carefully place the salmon fillets skin-side down (or presentation side down if skinless) in the pan. Do not overcrowd; cook in batches if necessary.
- Cook without moving for 4-5 minutes until edges turn opaque and the crust is nicely charred but not burnt.
- Flip gently and cook for another 3-4 minutes until salmon is cooked through but still juicy inside (internal temperature about 125°F / 52°C for medium).
- Lower heat to medium-low and pour the garlic butter mixture over the salmon.
- Spoon the garlic butter over the fillets a few times to coat them well.
- Sprinkle chopped fresh parsley over the top, then remove from heat.
- Serve immediately with your favorite sides.
