Ingredients

Instructions

  1. Cream the softened butter and granulated sugar together in a mixing bowl using an electric mixer on medium speed until pale and fluffy, about 3-5 minutes.
  2. Mix in the vanilla extract and salt until just combined.
  3. Slowly add the sifted all-purpose flour into the butter mixture. Mix on low speed or fold in with a spatula until just combined. Avoid overmixing.
  4. Turn the dough onto a lightly floured surface and roll into a log about 2 inches in diameter. Wrap tightly in plastic wrap and chill in the fridge for at least 30 minutes or up to 24 hours.
  5. Once chilled, slice the log into ¼-inch thick rounds and place them on a parchment-lined baking sheet about 1 inch apart.
  6. Preheat oven to 350°F (175°C). Bake cookies for 15-18 minutes until edges begin to turn golden but centers remain pale.
