  • 2 large boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 3 medium bell peppers, mixed colors (about 450g)
  • 1 large yellow onion, sliced into strips
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 limes (1 for juicing, 1 for serving)
  • Optional: 1 jalapeño, sliced
  • Optional: 1 cup corn kernels
  • Optional: 1 can black beans, drained

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
  2. Pat chicken breasts dry and slice into 1-inch strips. Keep pieces uniform for even cooking.
  3. Cut bell peppers into strips and slice onion into half-moons.
  4. In a large bowl, toss chicken strips with 1.5 tablespoons olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until coated.
  5. In a separate bowl or directly on the pan, toss peppers and onions with remaining olive oil and a pinch of salt.
  6. Arrange chicken in a single layer on one side of the pan and veggies on the other. Avoid crowding.
  7. Bake for 20 minutes. Halfway through (at 10 minutes), flip chicken and stir veggies.
  8. Chicken is done when internal temperature reaches 165°F and veggies are tender-crisp.
  9. Remove from oven, squeeze fresh lime juice over everything, and serve immediately with tortillas and toppings.

Notes

Do not crowd the pan to ensure roasting rather than steaming. Use fresh lime juice for best flavor. Chicken can be prepped and stored with spices up to 24 hours in advance. Leftovers keep well in the fridge for 4 days.
