Description

A cozy, hands-off baked french toast recipe with creamy pockets of cream cheese and fresh blueberries, perfect for busy weeknights or rushed mornings.

  • 1 loaf thick bread (about 12 slices, brioche or challah preferred, day-old)
  • 8 oz (225g) cream cheese, softened
  • 1 cup (150g) fresh blueberries
  • 6 large eggs
  • 2 cups (480ml) whole milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup (50g) sugar
  • 2 tablespoons (30g) butter, melted
  • Powdered sugar (optional, for serving)

Instructions

  1. Cut the softened cream cheese into small cubes or slices and set aside.
  2. Slice the bread into roughly 1-inch slices. Spread cream cheese on half of the slices, top with a few blueberries, then sandwich with the remaining bread slices.
  3. In a large bowl, whisk together eggs, whole milk, vanilla extract, cinnamon, and sugar until smooth and pale yellow.
  4. Place the assembled sandwiches in a single layer in a 9×13-inch baking dish. Pour custard evenly over the top, pressing gently to soak the bread. Let sit for 10 minutes or cover and refrigerate overnight.
  5. Preheat oven to 350°F (175°C). Brush the tops of the soaked bread with melted butter.
  6. Bake uncovered for 40-45 minutes until custard is set and top is golden brown. The center should feel firm and a knife inserted comes out clean.
  7. Let cool for 5 minutes, dust with powdered sugar if desired, and serve warm with maple syrup or whipped cream.

Notes

Use day-old brioche or challah bread for best texture. Soak bread in custard for at least 10 minutes or overnight for convenience. Brush melted butter on top before baking for a golden crust. Leftovers reheat well in oven or microwave. Do not freeze as texture degrades.
