Description
Soft and chewy oatmeal raisin cookies with a hint of cinnamon and molasses, perfect for lunchboxes and busy mornings. These cookies are family-approved, easy to make in batches, and hold up well without crumbling.

- 1 3/4 cups (150g) old-fashioned rolled oats
- 1 cup (125g) all-purpose flour (can substitute half with whole wheat flour)
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon molasses
- 1 cup (150g) raisins (soaked in warm water for 10 minutes if desired)
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Prepare baking sheet with parchment paper or silicone baking mat.
- In a large bowl, whisk together rolled oats, flour, baking soda, cinnamon, and salt.
- In a separate bowl, cream softened butter with brown sugar and granulated sugar until fluffy, about 3-4 minutes.
- Beat in egg, vanilla extract, and molasses until smooth and glossy.
- Gradually stir dry ingredients into wet mixture until combined; dough will be thick and sticky.
- Fold in raisins and optional nuts or chocolate chips until evenly distributed.
- Drop rounded spoonfuls of dough onto prepared baking sheet, spacing about 2 inches apart.
- Bake for 12 to 14 minutes, until edges are golden but centers remain slightly soft.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overbake to keep cookies soft in the center. Soak raisins in warm water for 10 minutes if dry. Chill dough for 30 minutes before baking for more uniform cookies. Cookies freeze well both baked and as dough balls.
