A quick, easy, and nostalgic after-school snack featuring celery sticks filled with peanut butter and topped with raisins, perfect for kids and customizable for various dietary needs.
Ingredients
- 4 large celery stalks (about 200g / 7 oz)
- ½ cup peanut butter (120g / 4.2 oz), creamy or chunky
- ⅓ cup raisins (50g / 1.75 oz)
- 1 tablespoon honey (20ml / 0.7 fl oz, optional)
- 1 teaspoon chia seeds (optional)
- A pinch of sea salt
Instructions
- Wash the celery stalks thoroughly and trim off the ends. Slice each stalk into 4-5 inch sticks. If celery is limp, soak in cold water for 10 minutes and dry well.
- Using a butter knife or small spatula, spread a generous layer of peanut butter along the flat side of each celery stick.
- Line up the raisins in a single row on top of the peanut butter, pressing lightly so they stick.
- If using, drizzle honey over the top and sprinkle chia seeds or a pinch of sea salt for extra flavor and crunch.
- Arrange the logs on a plate and serve immediately. Best eaten fresh before celery loses its crunch.
Notes
Use fresh, crisp celery for best crunch. Natural peanut butter spreads easier and tastes less sweet. Spread peanut butter just before serving to avoid soggy celery. Customize with almond or sunflower seed butter for allergies. Substitute raisins with dried cranberries, apricots, or mini chocolate chips. Store celery and peanut butter separately if prepping ahead and combine before serving. Consume assembled logs within 2 hours.
